This cheese is produced in one of the regions of the province of Salamanca with more tradition in cheese making. This invoked the guarantee trade “Arribes de Salamanca” and "Tierra de sabor". The company that manufactures it is inside Natual Park Arribes del Duero.

The milk used for the production is milk from sheep reared in the area.

  • Elaboration: Prepared traditionally, in a family farm with limited production.

The production process begins with the daily collection of milk from farms located in the Arribes. It is transported to the factory in a tanker truck, once in the factory are filtered and refrigerate for 24 hours at 4-6 °c. Subsequently, it will be inside 2 tanks where it reaches the ideal temperature and there is added in rennet. During this process are passed striving some blades to eject the serum. Later passes through a metering where they separate the whey from the mass and the molds are filled. They are covered with cloths and subsequently will be immersed in salmuero during 24 hours, finally passed to the chambers of maturation where goes from 6 to 12 months.

Ingredients: Raw sheep's milk, rennet, salt and preservatives (lysozyme derived from egg).

  • Expiration: it is recommended to eat in the 3 months of receipt
  • Storage: We recommend that you store in a cool dry place, between 3-6C°. A suitable place may be the bottom of the fridge.
